Ingredients
- 3 tablespoons chia seeds
- 1 cup milk or plant-based milk
- 1 medium apple
- Half teaspoon ground cinnamon
- 1 teaspoon honey or date syrup
- 4 tablespoons strained (Greek-style) yogurt
- 1 tablespoon walnut pieces
Method
- 1Stir the chia seeds into the milk, cover, and chill overnight or for at least 4 hours.
- 2Dice the apple small; cook gently in a pan with the cinnamon and a splash of water until soft.
- 3Stir the honey into the cooked apple, remove from heat and let it cool slightly.
- 4Layer the chia pudding in glasses, then the yogurt, then the cinnamon apple.
- 5Sprinkle with walnuts and serve cold.
