Chickpea Bulgur Pilaf with Yogurt

A balanced Anatolian classic in one plate: fiber- and plant-protein-rich chickpea bulgur pilaf, served with cooling yogurt.

Ingredients

  • 1.5 cups coarse bulgur
  • 1 cup cooked (or canned) chickpeas
  • 1 small onion, finely chopped
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 3 cups hot water or vegetable stock
  • Salt, black pepper, dried mint
  • 2 cups strained yogurt (to serve)

Method

  1. 1Sauté the onion in olive oil until golden, add the tomato paste and cook one more minute.
  2. 2Stir in the chickpeas, then add the bulgur and toss for a few minutes.
  3. 3Pour in the hot water and spices; once boiling, simmer on low until the liquid is absorbed.
  4. 4Remove from heat and let it rest, covered, for 10 minutes to fluff up.
  5. 5Sprinkle with dried mint and serve with cold yogurt on the side.
