Chickpea Bulgur Pilaf with Yogurt

A balanced Anatolian classic in one plate: fiber- and plant-protein-rich chickpea bulgur pilaf, served with cooling yogurt.
Ingredients
- 1.5 cups coarse bulgur
- 1 cup cooked (or canned) chickpeas
- 1 small onion, finely chopped
- 1 tablespoon tomato paste
- 2 tablespoons olive oil
- 3 cups hot water or vegetable stock
- Salt, black pepper, dried mint
- 2 cups strained yogurt (to serve)
Method
- 1Sauté the onion in olive oil until golden, add the tomato paste and cook one more minute.
- 2Stir in the chickpeas, then add the bulgur and toss for a few minutes.
- 3Pour in the hot water and spices; once boiling, simmer on low until the liquid is absorbed.
- 4Remove from heat and let it rest, covered, for 10 minutes to fluff up.
- 5Sprinkle with dried mint and serve with cold yogurt on the side.
