Date, Walnut and Cocoa Energy Balls

A no-bake snack made from just a handful of natural ingredients—perfect to toss in your bag for the afternoon slump.

Ingredients

  • 10 soft Medjool or deglet dates, pitted
  • 1 cup walnut halves
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp tahini
  • 1 tsp ground cinnamon
  • 1 pinch of salt
  • 2 tbsp desiccated coconut, for coating

Method

  1. 1Pulse the walnuts in a food processor until they reach a coarse, sandy texture.
  2. 2Add the pitted dates, cocoa, tahini, cinnamon and salt, then blend until the mixture clumps into a sticky dough.
  3. 3With slightly damp hands, roll the mixture into walnut-sized balls.
  4. 4Roll each ball in the desiccated coconut, chill for 15 minutes and serve.

Nutrition note

The natural sugars in dates are balanced by the omega-3s and healthy fats in walnuts, making this a fibre- and magnesium-rich snack that keeps you full.
