Oven-Baked Salmon with Vegetables

Ingredients
- 2 salmon fillets (about 150 g each)
- 1 zucchini, sliced into thin half-moons
- 1 red bell pepper, cut into strips
- 1 handful cherry tomatoes
- 2 tablespoons olive oil
- Juice and zest of 1 lemon
- 2 garlic cloves, crushed
- Salt, black pepper and oregano
Method
- 1Heat the oven to 200°C and line a tray with baking paper.
- 2Toss the vegetables with olive oil, garlic, salt and pepper, then spread on the tray.
- 3Place the salmon fillets over the vegetables; drizzle with lemon juice, zest and oregano.
- 4Bake for 18-20 minutes, until the salmon flakes easily, and serve hot.
